Baba Ghanoush


2-3 eggplants (about 1 lb each)

¼ c. tahini (sesame seed paste)

¼ c. extra virgin olive oil

2 tbsp. lemon juice

1-2 tsp. salt

A handful of chopped parsley


  1. Poke a few holes in the eggplants.
  2. Roast eggplants over an open flame or bake until soft
  3. Peel and dice eggplants
  4. Add to blender or food processor with remaining ingredients
  5. Season to taste.  Enjoy with freshly baked Yemeni bread!  😉
